It fermented between 12 and 14ºC for 4 weeks while 65% of the lot ended its fermentation on new French oak barrels. As soon as alcoholic fermentation is completed, it was left in "batonnage" on thin less for 8 weeks. |

This wine, although quite pleasing now, will continue to develop for the next years. Excellent with fish, cold meat and roasted mild seasoned fowls. |
