Ageing |
After fermentation, the wine goes through an incask "batonnage" process for a few weeks, then is aged until the end of winter. The wine is removed from the casks for bottling at the onset of spring. |

This wine should be drunk immediately, or if you prefer, you can let it age for 2 to 3 years. Good accompaniment to baked or boiled fish, particularly cod dishes. |
