Ageing After fermentation, the wine goes through an in-cask "batonnage" process for a few weeks, then is aged until the end of winter. The wine is removed from the casks for bottling at the onset of spring.
Ideal Temperature 18ºC
Consumption This wine should be drunk immediately at a temperature of 18ºC, of if you prefer, you can let it age for 2 to 3 years. Good accompaniment to baked or boiled fish, particularly cod dishes.
Colour Wine which is crystalline in appearance, yellowy straw colour with some greeny hues.
Aroma A tropical fruit aroma with some citrine and vanilla notes.
Flavour In the mouth it has good volume, excellent freshness and a prolonged aftertaste where fruit and wood combine harmoniously.
