Ageing |
After fermentation, the wine goes through an in-cask "batonnage" process for a few weeks, then is aged until the end of winter. The wine is removed from the casks for bottling at the onset of spring. |

This wine should be drunk immediately at a temperature of 18ºC, of if you prefer, you can let it age for 2 to 3 years. Good accompaniment to baked or boiled fish, particularly cod dishes. |
Colour |
Wine which is crystalline in appearance, yellowy straw colour with some greeny hues. |
Aroma |
A tropical fruit aroma with some citrine and vanilla notes. |
Flavour |
In the mouth it has good volume, excellent freshness and a prolonged aftertaste where fruit and wood combine harmoniously. |
