The must is separated form the lees beginning fermentation at a temperature between 12 to 14ºC which lasts 4 weeks while 70% of the lot ends its fermentation in oak barrels. As soon as alcoholic fermentation is completed, it was left in "batonnage" on thin less for 8 weeks. |

This wine, although quite pleasing now, will continue to develop for the next years. Excellent with fish, cold meat and roasted mild seasoned fowls. |
