Ageing The must is separated form the lees beginning fermentation at a temperature between 12 to 14ºC which lasts 4 weeks while 70% of the lot ends its fermentation in oak barrels. As soon as alcoholic fermentation is completed, it was left in "batonnage" on thin less for 8 weeks.
Ideal Temperature 8-10ºC
Consumption This wine, although quite pleasing now, will continue to develop for the next years. Excellent with fish, cold meat and roasted mild seasoned fowls.
Colour Limpid and citrine.
Aroma Mineral and elegant aroma, notes of lime, orange skin and persimmon.
Flavour Elegant and well balanced with fine acidity and mineral notes in harmony with a lemony profile that lengthens the refreshing taste.
